Insalata di Riso is a classic Italian rice salad eaten during the summer months. It’s bursting with incredible flavour, addictively delicious and so easy to make. This salad is perfect for a light lunch, taking on picnics or sharing at barbecues!

Ingredients

  • 1 cup (200g) Carnaroli or Arborio rice
  • 1 cup (290g/10oz) jar pickled vegetables, (such as Giardiniera or Gusto Riso)
  • 6 oz (160g) Tuna in olive oil, drained
  • 3/4 cup (3.5oz/100g) cubed ham
  • 2 hard boiled eggs
  • 1/3 cup(40g) olives
  • 3.5 oz (100g) cheese, (about 3/4 cup, such as Caciocavallo, Fontina, or Gruyere)
  • ¾ cup (100g) frozen peas
  • Salt (for cooking rice)

Instructions

  • Bring a large pot of water to a rolling boil and season it generously with salt. Add the rice and cook for approximately 20 minutes, or until it’s cooked through but still al dente. Add the frozen peas during the last minute of cooking. Drain the rice and peas thoroughly in a fine-mesh sieve.
  • Immediately run the drained rice and peas under cold water until they are completely chilled. This crucial step stops the cooking process and prevents the rice from clumping. Let them drain for a further 10-15 minutes, ensuring all excess water is removed.
  • While the rice is cooling, drain the pickled vegetables, tuna (flaking it if in large chunks), and olives. Place them all into a large mixing bowl. If your pickled vegetables are not pre-cut into small, bite-sized pieces, chop them now.
  • Cut the chosen cheese and ham into uniform, pea-sized cubes and add them to the bowl with the vegetables and tuna.
