Ingredients

  • 1 lb (450g) Paccheri pasta (or pasta of choice)
  • 2 zucchini (courgettes)
  • 1/2 cup (110g) Italian Stracchino cheese
  • 1 Garlic clove, finely chopped
  • 3.5 oz (100g) Pancetta, cut into cubes or matchsticks
  • 1 oz (30g or 1/2 cup) Parmigiano Reggiano, finely grated
  • Large handful fresh basil
  • 2 tablespoons of water
  • Olive oil
  • Salt

Instructions

  1. Bring a large pot of water to a rolling boil and salt it generously, until it tastes like the sea. While the water heats, wash your zucchini thoroughly. Cut each zucchini into quarters lengthwise, then chop them into small, bite-sized pieces.
  2. Heat a large, deep pan over a medium-low flame. Add the cubed pancetta and fry for several minutes, stirring occasionally, until it turns beautifully golden and crispy. Using a slotted spoon, carefully remove the crispy pancetta from the pan and set it aside on a plate lined with paper towels to drain any excess fat.
  3. To the same pan (which should now have flavorful rendered pancetta fat – add a drizzle of extra virgin olive oil if it looks a bit dry), add the chopped zucchini. Introduce the finely chopped garlic and a sprinkle of salt. Sauté for 1-2 minutes until the garlic is fragrant and the zucchini starts to soften, but isn’t yet browned.
  4. Pour 2 tablespoons of water into the pan with the zucchini, then cover it with a lid. Turn the heat to medium and allow the zucchini to cook and steam for 5-7 minutes, or until it becomes very soft and tender, easily mashable with a fork.
  5. While the zucchini cooks, add your chosen pasta to the boiling, salted water. Cook according to package instructions until it is perfectly al dente. Reserve about a cup of pasta water before draining.
