A Sarti Spritz is a bright, fruity Italian cocktail made with Sarti Rosa, chilled Prosecco and a splash of soda water. Light, sparkling and beautifully pink, this refreshing spritz is perfect for warm evenings, summer gatherings and relaxed aperitivo hour served with olives, crostini and your favourite antipasti.

Could Sarti Spritz be the summer drink everyone is talking about? It has all the qualities of a great Italian aperitivo cocktail: it is simple to make, easy to serve, colourful in the glass and light enough to enjoy before dinner with a few savoury snacks.
Sarti Rosa, pronounced sar-tee ro-sa, is an Italian aperitivo liqueur from Bologna that dates back to 1885. Although it has a long history, it is still less familiar than Aperol or Campari, which makes it a fun bottle to try if you love discovering new spritz recipes.
The liqueur has a gorgeous pink colour and is made with Sicilian blood orange, mango and passion fruit. The flavour is fruity, fragrant and tropical, with passion fruit coming through most strongly. It has a similar fruit-forward feel to Passoa liqueur, but with an Italian aperitivo character that works beautifully with sparkling wine.
Unlike many classic aperitivo drinks, a Sarti Spritz is not bitter. If you find an Aperol Spritz or Campari cocktail a little too sharp, this fruity spritz may be a better choice. It is sweet, sparkling, refreshing and very easy to drink, especially when served over plenty of ice with a fresh citrus garnish.
The classic ratio for this Sarti Rosa cocktail is wonderfully simple: three parts Prosecco, two parts Sarti and one part soda water. The result is a balanced, bubbly drink that takes just five minutes to prepare. Serve it in a large wine glass so there is plenty of room for ice, sparkle and garnish.
Below you’ll find the full Sarti Spritz recipe, along with some delicious Italian antipasti ideas to serve alongside it. It is an effortless cocktail for aperitivo hour, summer parties, garden drinks or any occasion where you want something fresh, colourful and a little different.

What to serve with a Sarti Spritz
A spritz is at its best when served the Italian way, with a few simple bites on the side. Salty, savoury snacks balance the sweetness of the cocktail and turn one drink into a relaxed aperitivo moment. Choose a few antipasti-style dishes that can be prepared ahead of time and shared at the table.
Marinated olives are always a great choice, especially with citrus, herbs and olive oil. Breadsticks, crostini, fried dough and stuffed peppers also work beautifully because they add crunch, richness and savoury flavour. If you are serving this Sarti Rosa spritz before dinner, keep the portions light and let the drink stay the star of the occasion.
