  • Perfect Homemade Summer Treat: Ideal for parties, picnics, or simply a refreshing family dessert, these sandwiches are a guaranteed crowd-pleaser and a delightful way to beat the heat.

My passion for these Italian ice cream sandwiches blossomed during my time living in Italy. The sheer variety available, from street vendors to gelaterias, was astounding. They truly are an iconic summer delight, found almost everywhere you turn, offering a quick and cooling escape from the Mediterranean heat. Among the myriad options, my absolute favorite was always a rich chocolate biscotto paired with classic vanilla ice cream, generously dipped in dark chocolate and speckled with crunchy hazelnuts. The combination was pure perfection, a symphony of textures and tastes that lingered long after the last bite.

Upon returning home, I was determined to recreate this cherished memory. The biggest hurdle, surprisingly, wasn’t the ice cream, but the “biscuit” itself. It wasn’t quite a traditional cookie nor a typical biscuit; rather, it possessed a unique cake-like softness, making it effortlessly enjoyable even when frozen solid. Many attempts were made, each bringing me closer to that elusive texture. After careful experimentation and refinement, I finally cracked the code! We’ve successfully developed our very own, utterly delicious homemade Italian Gelato Biscotto. And the best part? They are incredibly simple to make, proving that authentic Italian indulgence is well within reach for any home baker.

Ingredient Notes for Perfect Gelato Biscotto

Gather your ingredients to embark on this delightful journey of making Italian ice cream sandwiches.
  • Demerara Sugar: This unrefined cane sugar brings a beautiful depth of flavor and a slight caramel note to our chocolate biscotto base. Its larger crystals also contribute to that coveted soft, chewy texture. If demerara sugar isn’t readily available, you can easily substitute it with light brown sugar, which will offer a similar richness and moisture.
  • Unsweetened Cocoa Powder: For the iconic deep chocolate flavor and color of the biscotto, unsweetened cocoa powder is essential. Ensure you’re using good quality cocoa for the best results, as it forms the primary flavor profile of our cake base.
  • Vanilla Extract (or Paste/Bean): Vanilla is the secret weapon that enhances all the other flavors, particularly in the ice cream. High-quality vanilla extract is always a great choice. For an even more pronounced vanilla aroma and tiny speckled seeds, consider using vanilla bean paste or even scraping the seeds from a fresh vanilla bean.
  • Sweetened Condensed Milk & Heavy Cream (Double Cream): This dynamic duo is the cornerstone of our simple yet incredibly rich and creamy no-churn ice cream. When whipped together, the heavy cream provides the airy texture, while the condensed milk adds sweetness and prevents ice crystals from forming, resulting in a remarkably smooth homemade ice cream without the need for an ice cream maker.
  • Dark Chocolate & Hazelnuts for Dipping: The final flourish! Melting dark chocolate (though milk chocolate is also a delicious option) creates a crisp, irresistible shell. Mixing in finely chopped hazelnuts not only adds a wonderful crunch but also provides a classic Italian flavor pairing with the chocolate. We recommend dipping only half of each sandwich. This not only creates an appealing visual contrast but also makes the Gelato Biscotto much easier and less messy to hold and eat.

Recipe Tips and Expert Advice

Optimize with Store-Bought Ice Cream: While our homemade no-churn ice cream is wonderfully simple, you can absolutely streamline this recipe further by using your favorite store-bought ice cream or gelato. For best results, allow the purchased ice cream to soften slightly at room temperature until it’s easily spreadable. Once you’ve spread it onto your chocolate base, top with the second layer, wrap tightly, and return to the freezer. This trick is perfect for busy days or when you have a particular flavor craving!

Customize Your Nut Topping: The chocolate-hazelnut dip is a classic, but don’t hesitate to get creative with your toppings. You can omit the chopped nuts entirely if you prefer a smooth chocolate coating. Alternatively, experiment with other nuts like finely chopped pistachios for a vibrant green accent and unique flavor, or cashews for a milder, buttery crunch. Almonds are another fantastic choice that pairs beautifully with chocolate.

How long do Gelato Biscotto last in the freezer?

Proper storage is key to enjoying your homemade Gelato Biscotto for an extended period. When wrapped correctly, these delightful treats will maintain their quality in the freezer for up to 3 months. To achieve this, it’s highly recommended to wrap each ice cream sandwich individually and tightly first with baking parchment, then with plastic wrap (or a similar airtight freezer-safe material). Finally, store the individually wrapped sandwiches in an airtight freezer-proof container. This multi-layer wrapping prevents freezer burn and helps preserve their fresh taste and perfect texture.

Equipment

  • Baking parchment
  • Electric whisk (hand mixer)
  • 15×10 inch Baking tray
  • Freezer-proof dish (approx. 10 inch square or similar rectangular shape)
  • Clean kitchen towel

Ingredients

For the Biscotto (Chocolate Cake Base)

  • 140 g (1 stick plus 2 tablespoons) unsalted butter, melted, plus extra for greasing
  • 2 tablespoons olive oil (preferably extra virgin)
  • 100 g (½ cup) demerara sugar, or light brown sugar
  • 105 g (½ cup) white granulated sugar
  • 3 medium eggs
  • Pinch of salt
  • 1 teaspoon vanilla extract (or paste/bean)
  • 110 g (¾ cup plus 2 tablespoons) all-purpose flour
  • 60 g unsweetened cocoa powder (⅔ cup, packed)

For the No-Churn Vanilla Ice Cream

  • 300 ml (1 and 1/4 cup) heavy cream (double cream), chilled
  • ½ can sweetened condensed milk (200g / 7oz)
  • 1 teaspoon vanilla extract (or paste)

For Dipping (Optional Decoration)

  • 250 g (9oz) Dark chocolate, melted (can also use milk chocolate)
  • 2-3 tablespoons chopped hazelnuts, toasted (optional)

Instructions

  • Prepare the Biscotto Base: Melt the unsalted butter in a small saucepan and set it aside to cool slightly. While the butter cools, preheat your oven to 180°C (350°F) for a static oven.

Two photos illustrating the initial steps: on the left, melted butter, olive oil, sugars, eggs, and vanilla are combined in a bowl; on the right, the mixture is shown smooth and well-integrated after whisking.
Combining wet ingredients for the chocolate biscotto base.
  • In a large mixing bowl, combine the cooled melted butter, olive oil, vanilla extract, both demerara (or light brown) and white granulated sugars, and the eggs. Whisk all these wet ingredients together thoroughly with a hand whisk until the mixture is well combined and smooth.

  • Next, sift the all-purpose flour and unsweetened cocoa powder directly into the wet ingredients. Add a pinch of salt. Gently whisk everything together until the batter is completely smooth, ensuring there are no lumps of flour or cocoa powder. The resulting chocolate batter should have a notably thick consistency.

A collage of two images: one showing flour and cocoa powder being sifted into a bowl of wet ingredients, and the second showing the resulting thick, smooth chocolate batter.
Sifting dry ingredients into the wet mixture for a lump-free batter.
  • Grease a 15×10 inch baking tray with a little extra butter, then line it with baking parchment. The greased tray will help the parchment stay in place. Evenly spread the thick chocolate batter over the entire prepared tray, creating a smooth and uniform layer from edge to edge.

Two images depicting the baking process: on the left, the chocolate cake batter is being spread evenly into a lined baking tray; on the right, the perfectly baked and cooled chocolate cake base.
Spreading the batter and the finished baked biscotto layer.
  • Bake the biscotto base in your preheated oven for approximately 15 minutes, or until a toothpick inserted into the center comes out with moist crumbs. Once baked, remove the tray from the oven, cover the warm cake with a clean kitchen towel, and allow it to cool completely on a wire rack. This helps retain moisture and softness.

  • Once the cake is completely cool, carefully remove it from the baking tray. Trim off the very edges for a clean finish, then cut the large cake rectangle in half. These two halves will form the top and bottom layers of your ice cream sandwiches. Prepare a freezer-proof dish (roughly 10 inches in size, either square or rectangular) by lining it generously with plastic wrap, followed by a layer of baking parchment. Ensure there’s ample overhang to completely cover the top of the dessert later.

  • Place one of the chocolate cake halves at the bottom of your lined freezer dish. Make sure the side that was facing up during baking is now facing down, so the smoother bottom surface becomes the base of your sandwich.

  • Prepare the Ice Cream Filling: In a clean, large mixing bowl, combine the chilled heavy cream, sweetened condensed milk, and vanilla extract. Using an electric whisk (or stand mixer with a whisk attachment), beat the mixture until stiff peaks form. This means when you lift the whisk, the cream mixture holds its shape firmly.

Carefully spread this fluffy homemade ice cream in an even layer over the chocolate cake base in your dish. Then, gently place the second chocolate cake half on top of the ice cream layer. Wrap the entire dessert tightly with the overhanging plastic wrap and baking parchment to prevent any ice crystal formation and freezer burn.

Two photos demonstrating how to assemble the ice cream sandwiches before freezing: on the left, the creamy no-churn ice cream is spread over the chocolate cake base; on the right, the second cake layer is placed on top, ready for wrapping.
Layering the rich ice cream between soft chocolate biscotto.
  • Freeze and Cut: Transfer the wrapped dish to the freezer and allow it to freeze for a minimum of 8 hours, or ideally, overnight. This extensive freezing time is crucial for the ice cream to set completely and for the biscotto to firm up enough for clean slicing.

Once thoroughly frozen, unwrap the block from the dish. Trim the edges again if desired for a perfect rectangle, then carefully cut the large frozen block into 10 individual ice cream sandwiches. You can adjust the size to make more or fewer sandwiches according to your preference.

Optional Decoration: Chocolate-Hazelnut Dip

  • For an extra touch of indulgence, melt the dark chocolate in a heatproof bowl set over a saucepan of simmering water (or in a microwave safe bowl at 30-second intervals). Once melted and smooth, stir in the chopped hazelnuts. Take each frozen ice cream sandwich and dip half of it into the melted chocolate-hazelnut mixture. Allow any excess chocolate to drip off, then place the dipped sandwiches on a baking sheet lined with parchment paper. Return them to the freezer for a few minutes to allow the chocolate coating to set completely before serving. Leaving the other half undipped makes them easier to hold and enjoy!

Notes

Storage: To ensure your homemade Gelato Biscotto stay fresh and delicious, wrap each ice cream sandwich individually in parchment paper, then tightly again in plastic wrap. Store these double-wrapped treats in an airtight freezer-safe container in the freezer for up to 3 months.
