Ingredients

  • 400 g Chicken breasts, cut into medium chunks
  • 300 g Mushrooms, thinly sliced
  • Large handful fresh Tarragon, finely chopped
  • 95 g Mascarpone cheese
  • 120 ml White wine (or chicken broth)
  • 2 tbsp Plain flour
  • 1 White onion, finely chopped
  • 230 g Puff pastry, ready-rolled
  • 1 Egg, beaten (for egg wash)
  • 4 tbsp Olive oil (extra virgin recommended)
  • 250 ml Boiling water
  • 1 Chicken stock cube (dissolved in boiling water)
  • 1 clove Garlic, finely chopped
  • Salt and pepper, to season

Instructions

  • Pre-heat your oven to 180°C (350°F).
  • Heat about 3 tablespoons of olive oil in a large frying pan over medium heat. In a bowl, toss the cut chicken breasts with 2 tablespoons of flour, salt, and pepper until evenly coated. Shake off any excess flour, then add the chicken to the hot pan. Brown the chicken on all sides for a couple of minutes to seal in the juices, then remove it from the pan and set aside on a plate.
  • Add another tablespoon of olive oil to the same pan. Add the finely chopped onion and sauté for a minute until it begins to soften. Then, add the finely sliced mushrooms and continue to fry lightly for 2 more minutes. Finally, stir in the chopped garlic and cook for another minute until fragrant.
  • Pour the white wine into the pan and allow it to reduce by half, scraping up any delicious browned bits from the bottom. Next, dissolve the chicken stock cube in 250ml of boiling water and add this to the pan. Return the browned chicken to the pan and stir occasionally as the sauce begins to thicken.
  • Once the sauce has reached your desired thickness, stir in the mascarpone cheese and the fresh tarragon. Add a sprinkling of black pepper and continue to stir gently for 1-2 minutes until everything is well combined and creamy.
  • If you are using individual pie dishes, use them as a guide to cut out the puff pastry tops. Ensure you leave approximately 1cm (0.4 inches) extra around the rim for sealing. Alternatively, if using one large baking dish, trim the pastry to fit its edges. This is also the perfect time to cut out any decorative shapes for the top of your pies, if desired.
  • Divide the chicken and mushroom mixture evenly among your individual pie dishes or pour it into your chosen baking dish. Lightly brush the edges of the pastry with a little beaten egg, then carefully place the pastry tops over the filling. Use a fork to firmly seal the pastry edges to the rim of the dishes. Affix any pastry decorations you’ve cut out, then brush the entire top surface of the pastry with more beaten egg for a beautiful golden finish.
