Roasted Cherry Tomato Spaghetti with Burrata & Crispy ‘Nduja Breadcrumbs: An Elevated Italian Classic
While we cherish the simplicity of a classic Pasta al Pomodoro for its timeless appeal and straightforward deliciousness, this recipe takes those beloved flavors to an entirely new level. Consider it our ‘fancy’ rendition, yet surprisingly, it’s far from difficult to master. The magic begins with oven-roasting sweet cherry tomatoes and aromatic garlic, a process that intensifies their natural sugars and deepens their savory notes. Once perfectly caramelized, these roasted gems form the base of a velvety sauce, quickly simmered with rich heavy cream to achieve a luxurious texture and unparalleled depth of flavor.
The journey culminates as your perfectly al dente spaghetti is tossed through this exquisite sauce, embracing every strand with its vibrant taste. The dish is then crowned with a generous dollop of fresh, creamy burrata, which melts gently into the warm pasta, adding a sublime richness. But the true secret weapon, offering an exciting contrast in texture and a delightful spicy kick, comes in the form of crispy ‘Nduja breadcrumbs. This unique topping elevates the dish from simple to sensational. To complete this gourmet experience, don’t forget to pour yourself a glass of your favorite Italian vino. Buon Appetito!

Unveiling the Key Ingredients for this Gourmet Pasta
Crafting this exceptional pasta dish requires a selection of fresh, high-quality ingredients, each playing a crucial role in building its complex and satisfying flavor profile. Here’s a closer look at what you’ll need to create culinary perfection:

Ingredient Notes and Expert Substitutions
- Spaghetti: The Foundation of Your Dish
While spaghetti is our preferred choice for this recipe, its long, elegant strands perfect for catching the creamy sauce, feel free to choose almost any pasta shape you love. Linguine, fettuccine, bucatini, or even a shorter pasta like penne or rigatoni would work wonderfully. The key is selecting a high-quality bronze-die pasta, which offers a rougher texture that clings beautifully to the sauce. We highly recommend brands like La Molisana for their superior quality and authentic Italian taste, ensuring a delightful al dente bite every time.
- Heavy Cream (Double Cream UK): For Unmatched Richness
Heavy cream, known as double cream in the UK, is essential for achieving the luxurious, velvety texture of our roasted tomato sauce. Its high fat content provides a rich mouthfeel that perfectly balances the sweetness of the roasted tomatoes and the spice of the ‘Nduja. For alternative creamy elements, you could incorporate a dollop of creamy mascarpone cheese, which will add a delicate sweetness, or even a spoonful of fresh ricotta cheese, offering a lighter, fresher flavor profile and a slightly less dense sauce. Each option will subtly alter the character of the sauce, allowing for personalized culinary exploration.
- ‘Nduja: The Spicy Calabrian Secret Weapon
‘Nduja is a distinctive, spicy, spreadable salami hailing from Calabria, Italy. It’s renowned for its fiery flavor, rich pork taste, and incredible versatility. While it might be a specialty item that requires a bit of hunting down, its unique depth and heat are truly worth the effort, transforming ordinary breadcrumbs into an extraordinary topping. If ‘Nduja proves elusive, don’t despair! You can still achieve a fantastic spicy kick for your breadcrumbs by toasting them in good quality olive oil with finely minced garlic and a generous pinch of red chili flakes. This alternative will deliver a wonderful crunch and a satisfying heat, albeit with a slightly different flavor profile than the authentic ‘Nduja.
- Burrata: The Creamy Crown
Burrata cheese is a fresh Italian cheese made from mozzarella and cream. Its outer shell is solid mozzarella, while the inside contains stracciatella and cream, giving it an incredibly soft, luscious texture and a rich, milky flavor. When placed atop hot pasta, it gently melts, creating pockets of creamy indulgence that complement the tomato sauce beautifully. If burrata isn’t available, fresh ricotta cheese makes an excellent substitute. Ricotta will provide a lighter, slightly tangier creaminess, still offering a lovely contrast to the robust sauce, or even fresh mozzarella (torn) can provide a similar milky quality, though without the characteristic burst of creaminess.
- Cherry Tomatoes: Sweetness from the Vine
These small, vibrant tomatoes are the star of our sauce. Roasting them brings out their natural sweetness and concentrates their flavors, turning them into juicy, intensely flavored gems. Opt for ripe, firm cherry tomatoes for the best results. You can use any variety – red, yellow, or mixed – to add visual appeal.
- Fresh Garlic: The Aromatic Heart
Roasting whole garlic cloves alongside the cherry tomatoes mellows their pungency and infuses them with a sweet, nutty aroma. This roasted garlic then blends seamlessly into the sauce, adding a foundational layer of flavor that is both comforting and sophisticated. Always use fresh garlic for this recipe; dried or powdered alternatives simply won’t yield the same depth of taste.
- Olive Oil: The Golden Elixir
A good quality extra virgin olive oil is indispensable for roasting the tomatoes and garlic, and for starting the ‘Nduja breadcrumbs. It helps caramelize the vegetables and carries the flavors throughout the dish. Choose a robust, flavorful olive oil to truly enhance the Italian character of the pasta.
- Fresh Basil: A Burst of Freshness
A handful of fresh basil, stirred in at the end, provides a bright, aromatic lift that cuts through the richness of the cream and balances the savory notes of the tomatoes. Its peppery, slightly sweet aroma is quintessential Italian and brings a burst of freshness to every bite. Do not substitute with dried basil.
- Breadcrumbs: For Irresistible Crunch
Plain breadcrumbs are transformed into a crunchy, spicy topping when toasted with ‘Nduja. Panko breadcrumbs can also be used for an even lighter, crispier texture. The contrast between the soft pasta, creamy sauce, and crunchy breadcrumbs is one of the highlights of this dish.
- Salt and Pepper: Seasoning to Perfection
Essential for enhancing all the natural flavors. Use sea salt or kosher salt and freshly ground black pepper for the best results. Seasoning at each stage ensures a well-rounded and flavorful dish.
Step-by-Step Culinary Journey: Crafting Your Roasted Cherry Tomato Spaghetti
Follow these detailed steps to create your perfect bowl of roasted cherry tomato spaghetti. Each stage is carefully explained to ensure a flawless and enjoyable cooking experience.
- Prepare and Roast the Tomatoes and Garlic (Photos 1 and 2):
Begin by preheating your oven to a moderate 180℃ (350℉). This temperature is ideal for gently caramelizing the tomatoes without scorching them, allowing their natural sugars to develop. Halve your fresh cherry tomatoes and place them directly into a sturdy roasting tin. Add the whole garlic cloves – there’s no need to peel them just yet, as the roasting process will soften them beautifully, making them easy to squeeze out later. Drizzle generously with a high-quality olive oil, ensuring all the tomatoes and garlic are lightly coated. Season liberally with sea salt and freshly ground black pepper. Roast in the preheated oven for approximately 30 minutes, or until the tomatoes are wonderfully soft, slightly shriveled, and exhibit a beautiful, slightly caramelized edge. This roasting step is absolutely crucial, as it concentrates their sweetness and adds an incredible depth of umami flavor to your sauce.

- Craft the Crispy ‘Nduja Breadcrumbs (Photos 3 and 4):
While your tomatoes are roasting, prepare the star topping. In a small pan, melt about half a tablespoon of olive oil over medium heat. Add the ‘Nduja to the pan and gently fry, stirring continuously. This typically takes just a few minutes, as the ‘Nduja will slowly melt and render its flavorful, spicy fat. Watch carefully until it darkens slightly and becomes wonderfully fragrant. Once melted, add the breadcrumbs to the pan. Stir thoroughly, ensuring every crumb is completely coated in the spicy, rendered ‘Nduja fat. Continue toasting for about 30 seconds to 1 minute, until the breadcrumbs are golden brown and perfectly crisp. Immediately transfer the ‘Nduja breadcrumbs to a small bowl and set them aside. This prevents them from over-browning or losing their crunch.
- Develop the Creamy Roasted Tomato Sauce (Photos 5-8):
Once the roasted tomatoes and garlic are ready, carefully transfer them to the same pan you used for the ‘Nduja breadcrumbs (no need to clean it, the residual flavors will only add to the sauce!). Squeeze the softened garlic cloves out of their skins and add the creamy garlic pulp to the pan along with the roasted tomatoes. Pour in the heavy cream and about ½ cup (120ml) of your reserved starchy pasta water. Bring the mixture to a gentle simmer over medium heat. Allow it to cook for approximately 5 minutes, stirring occasionally, until the sauce has reduced slightly and thickened to your desired consistency. The pasta water is key here, as its starch helps emulsify the sauce, making it rich and glossy.

- Combine and Serve Your Gourmet Spaghetti (Photos 9 and 10):
While the sauce is simmering, cook your spaghetti or preferred pasta shape in a large pot of generously salted boiling water according to package directions, aiming for a perfect al dente bite. Remember to reserve at least 1-2 cups of that starchy pasta water before draining! Once cooked, add the drained spaghetti directly into the pan with your creamy roasted tomato sauce. Add a small handful of fresh basil leaves, roughly torn or chopped, and toss everything together vigorously. Ensure every strand of pasta is beautifully coated in the rich, fragrant sauce. Transfer the spaghetti to individual serving bowls. Crown each portion with a generous dollop of fresh burrata cheese, allowing its creamy interior to gently melt over the warm pasta. Finally, sprinkle liberally with your crispy ‘Nduja breadcrumbs for that irresistible crunch and spicy finish. Serve immediately and savor every exquisite mouthful!

Expert Tips for Mastering this Recipe
Achieving perfection with this dish is easy with a few key considerations. These tips will help you maximize flavor and ensure a delightful experience:
- Embrace High-Quality Ingredients: The Foundation of Flavor
As with all exceptional Italian cuisine, the quality of your ingredients is paramount. Even the simplest recipes are elevated by fresh, premium produce. For this pasta, selecting the best spaghetti, ripe cherry tomatoes, fresh garlic, and rich cream will make an undeniable difference. Opt for organic produce when possible, and choose a well-regarded pasta brand for the best texture and taste.
- Freshness is Key: Garlic and Herbs
For an authentic and vibrant flavor profile, always use fresh garlic and fresh basil. Avoid dried or powdered alternatives for these ingredients, as they simply cannot replicate the aromatic intensity and nuanced flavors that fresh produce brings to the sauce. Fresh basil stirred in at the end brightens the entire dish.
- The Magic of Pasta Water: Don’t Discard It!
Always reserve a cup or two of the starchy pasta cooking water before draining your spaghetti. This seemingly humble liquid is a chef’s secret weapon. Its starch helps to emulsify the sauce, creating a smooth, glossy, and cohesive texture that beautifully coats the pasta. It’s also invaluable for loosening the sauce if it becomes too thick during reheating.
- Storing Leftovers: A Convenient Option
While this pasta is truly at its peak when enjoyed immediately after preparation, leftovers can be stored in an airtight container in the refrigerator for up to 2 days. Be aware that the pasta may soften slightly over time as it absorbs more of the sauce.
- Reheating for Optimal Enjoyment
If you plan on reheating your roasted cherry tomato spaghetti, we highly recommend reserving some extra starchy pasta water from the initial cooking process. When reheating in a pan over low to medium heat, gradually add a splash or two of this reserved pasta water. It will help to rehydrate the pasta and loosen the sauce, bringing it back to its original creamy consistency without drying out.
- Perfect Al Dente Pasta: A Non-Negotiable
Cook your spaghetti until it is perfectly “al dente” – firm to the bite. Overcooked pasta becomes mushy and loses its structural integrity. Taste testing a minute or two before the package recommended time is always a good practice to ensure ideal texture.
- Don’t Be Shy with Seasoning
Season your pasta water generously with salt – it should taste like the sea! This is the only chance to season the pasta itself. Also, taste and adjust the seasoning of your sauce before adding the pasta, ensuring a well-balanced flavor throughout the dish.

Beyond Breadcrumbs: Creative Ways to Utilize ‘Nduja
‘Nduja, with its bold, spicy character, is an incredibly versatile ingredient that can elevate a multitude of dishes. Since it’s quite potent, a little goes a long way, meaning you’ll likely have some left over after making this spaghetti. Don’t let it go to waste! Roasted Cherry Tomato Spaghetti with Burrata and ‘Nduja Breadcrumbs
By Emily
Spaghetti tossed in a simple, creamy and delicious roasted cherry tomato sauce topped with burrata cheese and crispy ‘Nduja breadcrumbs. This is the type of pasta that feels that little bit extra special to be enjoyed on a lazy weekend or served to guests.
Ingredients
- 14 oz (400g) Spaghetti, or pasta of choice
- 1.3 lbs (600g) cherry tomatoes
- 4 cloves garlic
- ⅓ cup (80ml) heavy cream
- ½ cup (120ml) reserved pasta water
- Small handful fresh basil
- 1 tablespoon (15g) ‘Nduja
- ¼ cup (40g) breadcrumbs
- Burrata, for topping
- 1-2 tablespoons olive oil
- Salt and pepper to taste
Instructions
- Pre-heat the oven to 180℃ (350℉).
- Cut the cherry tomatoes in half and place them in a roasting tin with the garlic cloves (no need to peel them). Add a generous drizzle of olive oil and a sprinkle of salt and pepper. Roast for 30 minutes until soft and slightly caramelised.
- Meanwhile, add around half a tablespoon of olive oil to a pan and add the ‘Nduja. Fry until the ‘Nduja has melted and has darkened slightly (about 5 minutes). Add the breadcrumbs to the pan and stir into the ‘Nduja until thoroughly coated (about 30 seconds to 1 minute). Once ready, remove to a bowl and set aside.
- Bring a large pot of water to a boil and season it well with salt. Add the pasta and cook until al dente according to package instructions. Remember to reserve ½ cup (120ml) of pasta water before draining.
- When the tomatoes are done, transfer them (along with the squeezed, soft roasted garlic) to the same pan you cooked the ‘Nduja in. Add the heavy cream and the reserved ½ cup (120ml) of pasta water. Simmer on a medium heat until reduced and thickened slightly (about 5 minutes).
- Add the cooked pasta to the sauce with a small handful of fresh basil (torn or chopped) and toss to coat thoroughly. Serve immediately in bowls topped with a dollop of burrata cheese and generously sprinkled with the crispy ‘Nduja breadcrumbs.
Notes
- Burrata Alternative: If burrata is unavailable, fresh ricotta cheese or torn fresh mozzarella would work well as a creamy topping.
- ‘Nduja Alternative: If you don’t have ‘Nduja, we recommend sautéing finely minced garlic and red chili flakes in olive oil until fragrant, then adding your breadcrumbs and toasting until golden. This won’t replicate the exact flavor but provides a delicious spicy kick and crunch.
- Storage: Leftovers can be stored in an airtight container in the fridge for 1-2 days. The pasta will soften slightly the longer it is left. Always save some extra pasta water for loosening the sauce when reheating.
- Serving Temperature: This dish is best enjoyed immediately for optimal pasta texture and melting burrata.
