Strawberry Semifreddo with Strawberry Sauce

- Plastic wrap (cling film)

Ingredients
- 1.5 lbs (675g) fresh strawberries
- 3/4 cup (150g) sugar — separate into 100g (1/2 cup) and 50g (1/4 cup)
- 2 cups (450g) heavy cream (double cream UK)
- 3 large egg yolks
- 1 tablespoon lemon juice

Wash and chop the strawberries into small pieces. Place them in a large saucepan with 1 tablespoon lemon juice and 1/2 cup (100g) sugar.

Bring to a boil, then reduce heat and simmer until the strawberries break down and the mixture thickens, about 12–13 minutes. Remove from heat and transfer to a bowl to cool. Reserve 1/3 cup of the sauce for serving and refrigerate it once cool.

Whisk the remaining 1/4 cup (50g) sugar with the 3 egg yolks in a heatproof bowl set over simmering water. Whisk until the mixture is pale and thick. Continue whisking with an electric whisk if you have one, to achieve a light, airy texture.

Remove the egg mixture from the heat and stir in the cooled strawberry sauce. Let it sit for 10 minutes, then chill in the freezer for 20–30 minutes until completely cold.

Whip the cold heavy cream to stiff peaks, taking care not to overwhip. Fold one third of the whipped cream into the cold strawberry-egg mixture to lighten it, then fold in the remaining cream gently until evenly combined.

Line a loaf pan with plastic wrap, pour in the semifreddo mixture and smooth the top. Cover the top with more plastic wrap and freeze for at least 5–6 hours until firm. Remove from the freezer 15 minutes before serving, slice and serve with the reserved strawberry sauce.

- Loaf pan sizes: Tested in 10×5 inch and 9×4.5 inch loaf pans; both work well. For wider slices, choose the smaller pan so slices are broader.
- Storage: Store semifreddo in the freezer in an airtight container for up to 4 weeks. Thaw slightly before serving for the best texture.
