- 8 chicken thighs, skin on and bone-in
- 1 Carrot, finely chopped
- 1 Celery stalk, finely chopped
- 1 Onion, finely chopped
- 2 cloves Garlic, minced
- 3.5 oz Pancetta (100g), diced
- ⅓ cup dry Italian white wine (80ml), such as Pinot Grigio (can omit if preferred)
- 5-6 Sage leaves, fresh
- 1-2 sprigs Rosemary, fresh
- 1 Bay leaf
- 3.5 cups white beans (855g/30oz total undrained weight), high-quality jarred cannellini beans recommended
- 2 and ¼ cups low-sodium chicken stock (500ml)
- 2 tablespoons olive oil
- Salt, to taste

Finely chop the carrot, celery, and onion and place them in a bowl; set aside. Finely chop the garlic and keep it separate. Prepare your chicken stock and generously season the chicken thighs on both sides with salt.

Heat a large sauté pan or Dutch oven (with high sides) over medium-high heat until hot. Add the olive oil, then carefully place the chicken thighs skin-side down. Brown the chicken, skin-side down, for 10 minutes until deeply golden and crispy. Turn it over and brown for another 10 minutes on the other side. Remove the chicken to a plate and set aside.

Next, add the diced pancetta to the pan and fry until slightly golden and crispy. Add the chopped carrots, celery, onion, and fresh herbs (sage, rosemary, bay leaf) to the pan and sauté for 10 minutes until the vegetables have softened. Stir in the minced garlic and cook for one additional minute until fragrant.

Pour in the dry white wine and use a wooden spoon to scrape any browned bits (fond) from the bottom of the pan. Allow the wine to simmer and reduce by half. Once reduced, return the browned chicken thighs to the pan and pour over the low-sodium chicken stock. Bring to a gentle simmer, then reduce the heat to low, cover, and let it braise gently for 40 minutes, or until the chicken is fork-tender.
