- 14 oz (400g) cherry tomatoes, washed and dried
- 2 oz (50g) Parmigiano Reggiano, cut into large chunks
- 1 clove garlic, peeled
- 1 large handful fresh basil, (about 1 cup)
- 1 tablespoon extra virgin olive oil
- Salt, to taste
- Freshly ground black pepper, optional
Instructions

Bring a large pot of water to a rolling boil and salt it generously. Add your chosen short pasta and cook according to package directions until al dente. Reserve about 1 cup of pasta cooking water before draining.

While the pasta is cooking, add the washed cherry tomatoes, chunks of Parmigiano Reggiano, fresh basil, and the peeled garlic clove to a food processor. Blitz the mixture until it is well combined and has a saucy consistency with fine pieces of cheese, tomato, and basil throughout. You will need to pause halfway through and scrape down the sides of the food processor bowl to ensure everything is evenly processed.

Transfer the freshly made sauce to a large serving bowl. Add a sprinkling of salt to taste and 1 tablespoon of olive oil. Stir well to combine all the flavors.
