  • 1.7-2 lbs (800-900g) chuck beef
  • 3 tablespoons cornstarch, (cornflour UK)
  • 2 bay leaves
  • 2 sprigs fresh rosemary
  • ½ cup (120ml) dry red wine
  • 1 tablespoon tomato concentrate
  • 1 Carrot, finely chopped
  • 1 Celery stalk, finely chopped
  • 1 Onion, finely chopped
  • ¾ cup (100g) frozen peas
  • 8 baby potatoes, cut in half
  • 3 ¼ cup (750ml) beef stock, low sodium
  • Olive oil
  • Salt and freshly ground black pepper

Instructions

  • Finely chop the carrot, celery, and onion. Heat 2 tablespoons of olive oil in a large, heavy-bottomed pot or Dutch oven over medium heat. Once hot, add the chopped vegetables and sauté with a pinch of salt until they are soft and translucent but not browned, for about 10 minutes.
  • Meanwhile, season the chuck beef generously with salt and freshly ground black pepper, then dust it evenly with the 3 tablespoons of cornstarch, shaking off any excess. When the vegetables are soft, add the seasoned beef to the pot along with the bay leaves and fresh rosemary sprigs. Sauté, stirring often, until the meat has browned deeply on all sides, creating a delicious crust.
  • Pour in the red wine and simmer for 2 minutes whilst stirring, making sure to scrape up any browned bits from the bottom of the pot (this is called deglazing and adds immense flavor). Then, add the beef stock and tomato concentrate, stirring until well combined. Bring the mixture to a gentle simmer, then cover the pot with a lid and reduce the heat to low. Let it gently braise for 1 hour and 30 minutes.
  • After 1.5 hours, remove the lid. Cut the baby potatoes in half and add them to the stew. Continue to simmer on low heat, uncovered, for another 1 hour and 15 minutes.
