  • 2.8 lbs (1.3kg) pork shoulder, skin removed
  • 3/4 cup (200ml) white wine (or chicken stock)
  • 6 whole garlic cloves, peeled
  • 2 tbsp fennel seeds
  • 1 tbsp preserved lemon peel, finely chopped
  • 1 tsp chilli flakes (red pepper flakes)
  • 1 tbsp dried oregano
  • 1 tbsp fresh thyme, finely chopped
  • 1 tbsp fresh rosemary, finely chopped
  • 2 tbsp sea salt flakes
  • 1 tbsp olive oil

Instructions
