  • ½ cup (120ml) whole milk
  • 2/3 cup (160ml) espresso or strong brewed coffee
  • 30-40 savoiardi biscuits (ladyfingers), (220g)
  • ½ cup (70g) raw unsalted pistachios, blitzed for topping

Instructions

  • Brew your coffee and mix with milk. Pour it into a wide dish for dipping the Savoiardi in later, then set aside to cool completely.
  • Carefully separate the eggs, placing the two egg whites into a medium-sized mixing bowl and the three yolks into a large mixing bowl.
  • Using an electric whisk, begin whisking your egg whites. Once they start to become frothy, gradually add 3 tablespoons of caster sugar, one tablespoon at a time. Whisk the eggs until they are stiff, glossy, and form firm peaks. The bowl should be able to be held upside down without the whites falling out.
  • Next, using your electric whisk (no need to clean the beaters), whisk the egg yolks with the remaining 2 tablespoons of caster sugar until the mixture is thick and pale yellow, about 5 minutes. Add the mascarpone cheese and pistachio cream, then whisk until thoroughly combined and smooth.

  • Dipping the Savoiardi: I like to dip the Savoiardi (ladyfingers) in the coffee mixture on each side twice, but very quickly (just a couple of seconds). This prevents them from becoming too wet and soggy, which can ruin the texture of the tiramisu.
