Prepare to banish those winter blues with this exquisitely crafted Winter Salad – a vibrant symphony of textures and tastes. Imagine tender baby spinach providing a fresh base, crisp red apple adding a touch of sweet tartness, rich and creamy Gorgonzola cheese bringing its distinctive tang, and perfectly crunchy, sweet, and subtly spicy candied walnuts creating an irresistible bite. Crowned with salty, streaky smoked pancetta and jewel-like sprinkles of pomegranate arils, this salad isn’t just a side dish; it’s a culinary experience designed to brighten even the darkest winter day.
This isn’t merely a salad; it’s a celebration of seasonal ingredients, meticulously balanced to deliver a burst of freshness and warmth. Each forkful offers a delightful contrast – from the delicate greens to the robust cheese, the sweet fruit to the savory meat, and the delightful crunch of spiced nuts. It’s a dish that promises to invigorate your palate and bring a much-needed pop of color to your winter table.

The Indispensable Element: Creamy Gorgonzola
When it comes to crafting a truly exceptional winter salad, one ingredient reigns supreme: cheese. And not just any cheese, but a luscious, creamy, and wonderfully pungent blue cheese – none other than Gorgonzola. Its distinctive flavor profile and melt-in-your-mouth texture are absolutely essential for elevating this salad from simple to sublime. The Gorgonzola acts as a luxurious binder, its creaminess enveloping the other ingredients, while its bold, salty notes perfectly complement the sweetness of the apple and candied walnuts.
The inspiration for this salad’s unique dressing comes from the esteemed Marcella Hazan’s “The Essentials Of Classic Italian Cooking.” For anyone with a passion for Italian cuisine, this book is an absolute treasure, a foundational guide that delves into the intricacies of traditional Italian cooking with unparalleled depth and detail. It’s a culinary companion that will undoubtedly remain a staple in any kitchen.
Now, I’ll be completely honest: this Gorgonzola dressing might look a bit unconventional at first glance. Its rustic, slightly lumpy appearance might raise an eyebrow or two, but please, trust the process! Its flavor is nothing short of incredible. While this particular winter salad isn’t strictly Italian, the blend of flavors – especially with the influence of such an iconic Italian ingredient and a dressing inspired by a master – creates a fusion that is both comforting and exciting. It’s truly a recipe worth making this winter, offering a unique twist on classic salad elements.

What Makes a Perfect Winter Salad?
A truly perfect winter salad transcends mere ingredients; it’s an experience built on thoughtful balance and sensory delight. First and foremost, it must strike an impeccable harmony between sweet and savory flavors. This contrast is what makes each bite interesting and keeps you coming back for more. Think of the crisp, sweet apple dancing with the salty Gorgonzola and rich pancetta, a combination that tantalizes the taste buds and provides depth.
Beyond flavor, visual appeal is key, especially during the often-monochromatic winter months. Vibrant colors are non-negotiable in my book, and this salad certainly delivers with its striking reds and greens. The deep emerald of baby spinach, the rosy blush of red apple, and the dazzling ruby bursts of pomegranate arils create a feast for the eyes before you even take the first bite. A winter salad should be exciting and utterly delicious, a dish that breaks through the monotony of heavier winter fare with its freshness and complexity.
Furthermore, practicality is paramount. An ideal winter salad should be easy to put together, allowing you to enjoy gourmet flavors without spending hours in the kitchen. This particular Winter Salad ticks all these boxes and more. It’s a dish that not only nourishes your body but also lifts your spirits, making even the melancholic task of taking down the Christmas tree a little bit more bearable, a delicious antidote to post-holiday blues.
The beauty of a winter salad lies in its ability to utilize seasonal produce, often hearty greens, root vegetables, and fruits that thrive in colder climates. This allows for a robust yet refreshing dish that feels perfectly aligned with the season, offering nourishment and joy when we need it most.
How to Make This Flavorful Winter Salad with Spinach, Apple, Gorgonzola & Candied Walnuts
Creating this exquisite winter salad is a straightforward process, broken down into a few simple steps that maximize flavor and texture. Let’s begin with one of the most irresistible components: the candied walnuts. These little gems are surprisingly easy to make and, I must warn you, they are incredibly hard to resist! You might find yourself snacking on them before they even make it to the salad bowl.
Crafting the Candied Walnuts: Sweet, Spicy & Crunchy
In a small pan set over a medium heat, combine a generous knob of butter, granulated sugar, a pinch of salt, a vibrant touch of chilli flakes (or red pepper flakes for a milder kick), and a hint of paprika. Add your walnut halves to this fragrant mixture. Allow the butter and sugar to melt gently, dissolving together to form a rich, glistening syrup. Stir continuously for a couple of minutes, ensuring each walnut half is thoroughly coated in the sweet and spicy glaze. The aroma filling your kitchen will be utterly delightful. As soon as the walnuts are evenly coated and the mixture is bubbling, immediately transfer them onto a sheet of baking paper. This quick transfer is crucial to prevent them from sticking together. Use a fork or spatula to separate them, ensuring they cool into individual, crunchy pieces. Set them aside to harden; they’ll become wonderfully crisp as they cool.

Preparing the Crispy Pancetta: A Savory Crunch
Next up is the streaky bacon or pancetta. The smoky, salty crispness of the pancetta provides a fantastic counterpoint to the sweetness and creaminess of the other ingredients. Place the pancetta strips under a hot grill (or cook them in a pan) until they are beautifully golden and wonderfully crispy on both sides. Watch them carefully to prevent burning. Once perfectly crisp, remove them and drain any excess fat on a sheet of kitchen paper. This ensures they maintain their delightful crunch. Set the crispy pancetta aside to cool slightly before crumbling or chopping them into smaller, bite-sized pieces.
The Unique Gorgonzola Dressing
Now for the star of the show – the dressing that ties all these incredible flavors together. In a mixing bowl, combine high-quality olive oil and red wine vinegar with a pinch of salt and freshly ground black pepper. Whisk these ingredients together vigorously until they are completely homogenized, creating a smooth, slightly creamy emulsion. This forms the base of our dressing.
Here’s where it gets interesting: add the room-temperature Gorgonzola cheese to the oil and vinegar mixture. Using a fork, mash the cheese directly into the dressing. I know, it might seem a bit unconventional, and the dressing will have a somewhat rustic, lumpy appearance. But don’t be deterred by its look! The magic happens in the flavor. The room-temperature cheese blends more easily, allowing its creamy texture and pungent notes to infuse throughout the dressing, creating an incredibly rich and flavorful coating for your greens. This unique texture is part of its charm and utterly delicious.
Finally, add the fresh baby spinach to the bowl with the dressing. Gently toss the spinach until every leaf is evenly coated. Ensure the delicate greens are thoroughly embraced by the creamy, tangy Gorgonzola dressing, ready to absorb its wonderful flavors.
Assembling Your Masterpiece: The Winter Salad
With all your components prepared, it’s time to assemble this stunning winter salad. Divide the dressed spinach evenly among your serving bowls or plates, creating a lush green bed. Artfully arrange equal amounts of the thinly sliced red apple, the remaining crumbled Gorgonzola, the glistening pomegranate arils, the irresistibly crunchy candied walnuts, and the savory crispy pancetta pieces over the spinach. Each ingredient should be thoughtfully placed to ensure a balanced flavor and visual appeal in every serving.
Finish each salad with a final sprinkling of freshly ground black pepper to enhance the flavors, and serve immediately. This salad is best enjoyed fresh, allowing the textures to remain crisp and the flavors vibrant. It’s not just a meal; it’s an experience, a delightful journey through sweet, savory, creamy, and crunchy elements that will undoubtedly impress.

Top Tips for Making This Winter Salad a Resounding Success
- Prepare Ahead: Candied Walnuts: To save time and streamline your preparation, the candied walnuts can be made well in advance. Once they are completely cooled, store them in an airtight container at room temperature. They’ll retain their delightful crunch for several days, making them perfect for last-minute salad assembly. Pro tip: Make extra! They make an incredibly delicious and utterly addictive snack all on their own.
- Room Temperature Gorgonzola is Key: For the dressing to achieve its optimal creaminess and to blend seamlessly with the other ingredients, it is absolutely essential that the Gorgonzola cheese is at room temperature. Take it out of the fridge at least 30 minutes before you plan to make the dressing – the longer, the better. This softens the cheese, allowing it to mash and emulsify much more easily into the olive oil and vinegar.
- Embrace the Lumps (or don’t!): Don’t worry if the Gorgonzola dressing appears lumpy after mashing the cheese. This rustic texture is entirely intentional and contributes to the salad’s charm and unique mouthfeel. However, if you prefer a perfectly smooth dressing, you can easily blitz it in a food processor or blender for a few seconds until it reaches your desired consistency.
- Apple Choices: Sweet is Best: Any sweet red apple variety will work beautifully in this salad, contributing a lovely crispness and natural sweetness. Varieties like Fuji, Gala, or Honeycrisp are excellent choices. If you opt for green apples, ensure you select a sweet variety rather than a tart one, as the salad benefits greatly from the interplay of sweetness against the savory and tangy elements.
- Crispy Pancetta Perfection: When grilling or frying the pancetta, ensure it reaches a perfect crispness. This textural element is crucial. Keep a close eye on it, as it can go from perfectly golden to burnt very quickly. Draining it on kitchen paper helps remove excess fat, ensuring it stays crunchy.
- Pomegranate Preparation: Removing pomegranate arils can sometimes be a messy task. A simple trick is to cut the pomegranate in half, hold each half cut-side down over a bowl, and gently tap the back with a wooden spoon. The arils should release quite easily.

4 people
Ingredients
- 7 oz (200g) baby spinach
- 1 red delicious apple, thinly sliced
- 4.5 oz (130g) gorgonzola, at room temperature
- 1/2 pomegranate, arils removed
- 5.2 oz (150g) streaky bacon or pancetta strips, (approx. 2 slices per person)
- 5 tbsp olive oil
- 1 tbsp red wine vinegar
- 1 cup (80g) walnut halves
- 3 tbsp sugar
- 1/4 tsp chilli flakes, (red pepper flakes)
- 1/4 tsp paprika
- 1 oz (30g) Butter
- salt and pepper, to taste
Instructions
-
To prepare the candied walnuts, add the walnut halves, sugar, chilli flakes, paprika, a pinch of salt, and butter into a small pan. Place over medium heat. Allow the sugar and butter to melt together for a couple of minutes, stirring to coat the walnuts thoroughly. Be careful not to let the sugar burn.
-
Immediately transfer the coated walnuts to a sheet of baking paper. Using a fork or spatula, separate the walnuts quickly to prevent them from sticking together as they cool. Set aside to harden and become crunchy.
-
For the crispy pancetta, place the bacon or pancetta strips under a hot grill or cook in a frying pan until they are perfectly crispy and golden on each side. Once cooked, drain them on kitchen paper to remove any excess fat.
-
To make the dressing, combine the olive oil and red wine vinegar in a large mixing bowl with a pinch of salt and pepper. Whisk these ingredients together until completely homogenized. Add half of the room-temperature Gorgonzola cheese and mash it with a fork directly into the dressing. While there may be a few lumps, this is normal and contributes to the dressing’s unique character.
-
Add the fresh baby spinach to the prepared dressing. Gently toss the spinach until every leaf is evenly coated with the flavorful Gorgonzola dressing.
-
To assemble the salad, divide the dressed spinach among your serving bowls. Top each portion with equal amounts of the thinly sliced apple, the remaining crumbled Gorgonzola, the glistening pomegranate arils, the crispy bacon or pancetta pieces, and the crunchy candied walnuts. Finish with a final grinding of black pepper and serve immediately.
Notes
- Don’t be concerned about the rustic appearance of the dressing; its incredible flavor is what truly matters.
- Ensure the Gorgonzola cheese is at room temperature before preparing the dressing; this is crucial for a smooth blend.
- For easier consumption and better distribution, cut or tear the crispy bacon or pancetta into smaller pieces before sprinkling them over the salad.
- The sweetness of the candied walnuts can be adjusted by adding a touch more chili flakes if you prefer a spicier kick.
- This salad is best served fresh to maintain the crispness of the apple and spinach.
